How to store extra virgin olive oil

Extra virgin olive oil should be stored in the dark, at 14–18°C, away from heat sources and strong odors, and the bottle should be tightly sealed after use. Its enemies are light, heat, and oxygen, which degrade its aromas and polyphenols. It should preferably be consumed within 18 months of bottling.

What are the four golden rules?

  • Light: store it in the dark, because light oxidizes the oil. An opaque bottle helps, but still store it in the pantry.
  • Temperature: 14–18°C, without sudden changes. No refrigerator, no near heat sources.
  • Air: close the bottle tightly, because oxygen is the main enemy.
  • Odors: oil absorbs them, so keep it away from aromatic foods, detergents, perfumes.

How long can it be stored for?

Oil does not improve with age. To fully enjoy its aromas and polyphenols, consume it within approximately 18 months of bottling.
