What is a high-polyphenol olive oil?

It is an extra virgin olive oil that exceeds 250 mg/kg of phenolic compounds, the threshold recognized by EFSA for benefits related to the protection of blood lipids from oxidative stress. Polyphenols are natural antioxidants and can also be recognized by taste: they are responsible for the bitter and pungent notes.

Why are polyphenols good for you?

Three molecules are particularly studied: oleocanthal, oleuropein, and hydroxytyrosol. They counteract oxidative stress and help modulate inflammation. EFSA recognizes the benefit from 250 mg/kg with about 20 g per day (two tablespoons). They are one of the reasons why extra virgin olive oil is a cornerstone of the Mediterranean diet.

How can you recognize an olive oil rich in polyphenols?

The most immediate sign is the taste: bitter and pungent indicate a lively oil. Variety, harvesting at the right time, and speed between harvesting and milling with cold extraction also matter. Light, heat, and oxygen degrade polyphenols: this is why an opaque bottle and consumption within about 18 months are necessary.
