What is the Itrana cultivar?

It is the historic olive variety of this area of Lazio, cultivated between Sonnino, Itri, and the Pontine Hills. It has a thick skin and ripens late, which allows it to remain on the tree until late November without spoiling. In the mill, it produces an oil with a medium-intense fruitiness, with that green tomato and almond finish that is recognizable at first taste.

We process it in purity: monocultivar means that the bottle contains only Itrana, with no blending with other varieties.

What does it mean that your oil is high in polyphenols?

Polyphenols are the natural antioxidants in olives: they are what give the oil its peppery bite and bitterness, and they are what protect the oil from oxidation over time. EFSA, the European Food Safety Authority, recognizes a health claim for levels above 250 mg/kg.

Our oil exceeds that threshold. This is no coincidence: it depends on early harvesting, milling within a few hours, and cold extraction, choices that result in lower yields.

How long does it last and how should it be stored?

An extra virgin olive oil is at its best within 18 months of harvesting, but how you store it at home is as important as the date.

Three things are enough: away from light, away from the stove, and with the cap tightly closed after each use. Light, heat, and oxygen are the three real enemies. That's why our bottle is made of dark glass and has a cap that truly seals.

What is the difference between the Riserva line and the Premium line?

The oil comes from the same cultivar, the same hand-picking, and the same milling within a few hours. What changes is the origin and the packaging.

The Riserva comes from the historic olive grove that Grandpa Ernesto planted in 1948, is a limited edition, and has a petrol blue glass bottle with a wooden cap. The Premium is designed for everyday use, with essential dark glass, and is available in three sizes.

Can it be used for cooking or only raw?

It's best when used raw: on bruschetta, on steamed fish, in a legume soup, on mozzarella. That's where you'll taste the aromas for which the oil was made.

It holds up well in cooking, but prolonged heat first takes away the aromas and then the polyphenols, which are exactly the two things you're paying for. If you use it in a hot dish, add it at the end of cooking.
